Although pastry was not originally part of his career plan, David discovered a passion for the craft at the age of 18 and decided to pursue it professionally, learning through hands-on experience despite having no formal diploma at the time.

Four years later, he moved to Japan to further develop his skills, working at PAUL Bakery in Tokyo. Upon returning to France, he resumed his studies while gaining valuable professional experience in the pastry industry. He later entered the world of training, teaching at the Hauts-de-France Chamber of Trades before relocating to China, where he became a pastry instructor at Bellevie School in Changsha.

During these years, he also developed a passion for water ice sculpture, a discipline that would become his specialty. His dedication and creativity led him to win the title of French Water Ice Sculpture Champion in both 2021 and 2022. In 2023, he achieved another major career milestone by earning the prestigious title of Meilleur Ouvrier de France (MOF) Glacier.

Today, he is the founder of Astral Glace, his own artisanal ice cream shop in Lille. He is also a partner in TrésTenTanT, an ice cream and pastry boutique based in Suzhou, China, where he continues to share his expertise and passion for frozen desserts and pastry arts on an international scale.
