A specialist chocolate course providing you with the opportunity to learn the modern techniques to create a stunning chocolate showpiece at competition level
During the course Mark Tilling Callebaut Ambassador and previous UK Chocolate Master will impart his vast knowledge that he has gained through his own successful competition journey.
Mark will take you through the whole creative process from sketch pad to Master piece demonstrating different techniques and application. He will give step by step instruction so that you can replicate and produce your own creative masterpiece.
Designed for: Professional Chefs and Chocolatiers who would like to take their chocolate skills to the next level and give them confidence to produce impressive show pieces for their work place or enable them to enter competitions.
Course Objective: Throughout the course you will be learning a range of showpiece techniques to help you produced a one meter high showpiece

You are a professional with good knowledge of chocolate. You are familiar with the tempering of chocolate and the basic techniques. This course does not discuss tempering or cooling chocolates.
Designed for participants who have confidence in their skills of wkrking with chocolate, have worked as a craftsperson or completed the Chocolate Academy Beginners course.
The UK CHOCOLATE ACADEMY™ center is based in Banbury, Oxfordshire and is a ‘State of the Art’ purpose-built training environment with eight individual work stations, allowing for one-to-one, hands-on tuition. The Academy is situated adjacent to the factory allowing easy access for tours of the Barry Callebaut plant.
Our courses have been designed to offer practical and theoretical help for the novice chocolatier through to the chocolate artisan, pastry chef, confectioner, baker, caterer and lecturer.
