This chocolate bar recipe combines ruby with dried raspberry pieces. The great thing about ruby is that it opens up to a wide variety of new, exciting ingredients. Its fruity taste and fresh sour notes work very well with acid fruits and berries.

Place into mould.

Temper and add. Leave to crystallise.
