Motivation - why did you use certain Callebaut products in the recipe? (see example below): Ruby for the Japanese recalls the cherry blossoms enjoyed in a short period every year. The fragrance of cherry blossoms is best with tonka beans, raspberries, marriages with lyche scent.

    35% cream

Bring cream to the boil.

  • 1g
    Tonka beans

Add broken Tonka beans.
Leave to infuse 3min.

  • 205g
    sucrose
  • 24g
    Lactose
  • 80g
    glucose syrup DE 60
  • 2g
    guerande salt
  • 110g
    raspberry puree
  • 50g
    lychee puree
  • 65g
    lime puree

Add and heat.

Heat until 110°C.
Mix everything together and emulsify.
