A water-free cocoa paste with 60% cocoa content and no added sugar. Ready-to-use, bake-stable, can be flavored and freeze-stable with a working temperature of 20-24°C. Base made from the finest cocoa solids. Offers an intense cocoa flavor and blackish-brown color, made with non-hydrogenated fats. Recommended dosage: 4-8% (40-80g per kg of mixture). Ideal for flavoring couvertures, glazes, ganache, creams, fillings, glacés, and dough.
