Cinnamon flavoured white chocolate mousse

Oven dried apple slices and fig slices

Cut in slices with a machine: max. 2 mm thick. Soak in a mixture of sugar syrup and lemon juice. Put between 2 sheets of bake proof paper and leave to dry in the oven for at least 2 hours at 90°C |
White chocolate mousse

of cinnamon powder
3 cinnamon sticks 700g milk 300g cream 10g brown sugar |
Pulverise the cinnamon sticks and mix everything together. Bring to the boil, leave to cool and sieve |
| 800g Chocolate mousse powder | Mix with cream mixture and beat for 5 minutes |
