Double Chocolate Chunk Cookies

Ingredients Preparation
1 cup Callebaut Dark Chocolate
1 cup Unsalted Butter, Room Temperature
1 cup Callebaut Milk Chocolate
2 Whole Eggs
1 1/4 tsp Baking Soda
1/2 cup Sugar
1/2 cup Brown Sugar
1 1/4 tsp Vanilla Extract
1 2/3 cup All-Purpose Flour


Preheat oven to 350 F. Prepare a baking sheet.
In a large mixing bowl or with an electric mixer, cream the butter and both sugars.
In a separate heatproof mixing bowl, microwave the chocolate on HIGH for 1 1/2 - 2 minutes, stir every 30 seconds. Do not burn. Add to mixture.
Add eggs, one at a time, and vanilla extract.
Sift flour and baking soda together and add to mixture. Mix until dough just comes together.
By hand, fold in chocolate chunks. Do not overmix.
Scoop cookie dough with a large spoon onto your baking sheet. Bake for 7-9 minutes for gooey cookies and 9-11 minutes for crisper cookies.
Cool on wire rack before serving.
