The taste
Amapucha is characterised by a soft, well-rounded cocoa taste. Its

… adding a mild chocolate taste and plenty of fruity and
spicy hints to confectionery and desserts. Its typical exotic,
liquorice-like flavours are ideal when combined with compatible
Caribbean flavours like banana, brown rum, coffee etc. It is great
too, in harmony with refined spices with a more floral character
such as star anis, lavender etc.
The blend
Amapucha holds all the excitement and tropical mildness
of the Caribbean islands. Its soul is determined by a blend of
Dominican, Mexican and Venezuelan cocoa beans, known for their
soft, pleasant bitterness and aromatic character.

Otovalo 65%

… creations that demand a firm chocolate body and refined
liqueur-like aromas. Otovalo harmonises brilliantly with stronger
flavours such as anis, even with olive oil and liqueurs. On the
other hand, it is even compelling enough to stand alone and offer a
fascinating chocolate palate.”
The blend
The Otovalo blend contains Ivory Coast and Sao Thomé
beans that give it its solid cocoa body. The Ecuadorian cocoa beans
selected are renowned for their fruity
flavours. The end result is a very well balanced and powerful dark
chocolate.
