Cinnamon flavoured white chocolate mousse (Created by Eddy Van Den Langenbergh - Teacher at VTI-Spijker in Belgium)

Oven dried apple slices and fig slices

Ingredients Preparation
1 apple
1 fig
Cut in slices with a machine: max. 2 mm thick. Soak in a mixture of sugar syrup and lemon juice. Put between 2 sheets of bake proof paper and leave to dry in the oven for at least 2 hours at 90°C

White chocolate mousse

Ingredients Preparation
2 pinches of cinnamon powder
3 cinnamon sticks
700g milk
300g cream
10g brown sugar
Pulverise the cinnamon sticks and mix everything together. Bring to the boil, leave to cool and sieve
800g Chocolate mousse powder Mix with cream mixture and beat for 5 minutes
