Butterfly cookies (Created by Luc De Corte - Produpain - Belgium)

Ingredients Preparation
1L water
2,5 kg flour
100 g sugar
200 g butter
30 g salt
250 g entire eggs
100 g yeast
Knead all ingredients together for 8 minutes at lowest speed.
1,25 kg butter Add to the dough at 3 x 3 spins.
Creme dell'Artigiano Nocciola Roll out to 3 mm thickness
1. Roll out dough, spread the cream evenly on top.
2. Fold up the dough.
3. Cut the dough in equal-size pieces and twist them once in the middle.
