Chocolate mousse with an espuma of tiramisu (Created by Eddy Van Den Langenbergh - Teacher at VTI-Spijker in Belgium)

Chocolate mousse

Ingredients Preparation
800g Chocolate mousse powder
1L milk
Mix together and beat for 5 minutes

Espuma of tiramisu

Ingredients Preparation
60g pasteurized egg yolks
300g cream
4 spoons of mascarpone
6 spoons of icing sugar
1 spoon of Amaretto
20g pasteurized egg white
Mix together. Fill a whip cream dispenser (0,5 L content) with the mixture (charge with 1 charger). Shake well and keep 4 hours in the fridge before using
