Chocolatier Dr. Sue Williams' research has convinced her that dark chocolate has health benefits. But she didn't start making it for health reasons.  She started because she loves good chocolate.

"I just really love the taste of European chocolate," she says.  "They're a finer grind and smoother on the palate."

She turns primarily to Belgian-made Callebaut, whose company values are aligned with her own.  Callebaut supports peer-reviewed, evidence-based research, she says.  In addition, "Callebaut is very interested in the health benefits of chocolate...They are interested in fair trade, in organic, in making sure no child labor was used."
